Amino acid arylamidase (Aminopeptidase M) from hog kidney; a 280,000 MW metalloprotease which hydrolyzes proteins or peptides containing free alpha-amino or alpha-imino groups and those containing only L-amino acids.
Acetylation of the N-terminus blocks amino acid release, and proline is released slowly, especially where it occurs next to certain hydrophobic residues.
Optimum pH: 7.0-7.5
